Allow Admins to Edit Bookings and Override Availability

Administrators should be able to edit booking dates directly, including active bookings with past start dates and bookings that extend into fully booked dates. Admins should also be able to override the set capacity when necessary. Currently, extending or adjusting a stay may require cancelling and recreating the entire booking, which is inconvenient and risks losing the original booking information.
